Here’s a fun way to combine two classic summertime treats: popsicles and piña coladas. I added berries here, but kiwi, peach, mango, papaya, lychee and watermelon will taste great too.

prep time: 10 minutes
cook time: 5 minutes
freeze time: 4 hours
total time: 4 hours, 15 minutes
serves: 6 to 8 popsicles

Mixed berry piña colada popsicles

1 can full-fat coconut milk
2 ounces rum (white, dark or spiced)
2 cups frozen pineapple chunks
1/2 cup blueberries, raspberries or blackberries

  1. Pour the coconut milk, rum and pineapple chunks into a blender and blend until smooth.
  2. Pour the cocktail into popsicle molds and add berries.
  3. Freeze for at least 4 hours.
